BEST POPOVERS

500 F (260 C) oven temperature is the secret to the very best popovers ever.

Ingredients

  • 6 eggs
    3 cups milk
    1 teaspoon salt
    3 cups all purpose flour
    oil

Preparation

  • In a mixing bowl, whisk together the eggs, milk, salt and flour.
    Strain the mixture and let rest 1 hour.
    Pour 1/4 inch of oil for each popover in popover pans or large muffin pans.
    Heat the oil in the oven at 500 F. until it smokes, about 15 minutes.
    Fill the cups with mix and bake at 350 F for 45 to 50 minutes.
    The popovers will be brown and crisp.
